About Chicken parmigiana: Chicken parmigiana is the popular Australian and Italian-American dish which consists of crumbed chicken breast topping along with pasta which has tomato sauce and mozzarella along with parmesan or provolone cheese. It is a slice of ham or the bacon which is either added but not all the chefs which are in agreement with addition of the pork. It is also based on the combination of Italian Melanzane Alla Parmigiana which is a dish using the breaded eggplant slices along with costelette Parmigiana. The other names of the Chicken Parmigiana are Chicken Parmesan, Pollo Alla Parmigiana and in United States as Chicken Parm.

How to make Chicken parmigiana: Making chicken parmigiana is easy and most of the time the ingredients are the one which is available at home:

. 2 Cups fresh breadcrumbs or panko for the crustier caotings

. 1/4 Cup Parmesan Cheese with extra topping if desired

. 2 large skinless chicken breast fillets which is cut in half through the centre

. 1.4 cup flour which is seasoned lightly with the salt and freshly ground black pepper

. 2 eggs which is beaten

. 1-2 Cups simple pasta sauce

. 4 slices of medium thick leg ham

. 1-2 cups grated mozzarella cheese and more if desired

. Crusty or garlic bread with green salad along with chips for the serving

Recipe Instructions:

To prepare Chicken breasts:

Placing of the chicken breasts between the cling film sheets and bash out with rolling pin along with metal mallet which is about 5mm thick.

Combining of breadcrumbs along with Parmesan in a large bowl. The coat chicken which is lightly with flour and dip it into egg along with mixing with breadcrumbs mix pressing it firmly. Refrigerate it for some time.

Making of dish:

. First warm the pasta sauce

. Heat it over the grill to high and cook the chicken for 5 minutes each side and then remove.

. Pouring of half the warmed pasta sauce with a shallow ovenproof dish and top it up with chicken.

. Then lay a slice of ham over each cooked chicken breast

. After that pour the remaining pasta sauce over the ham slices

. Scatter the mozzarella evenly over the top and then grill it for 3-4 minutes until the cheese gets melted and the sauce gets bubbling hot.

. Serve it with crusty or garlic bread along with garden salad and chips which has become an essential part of Chicken parmigiana.
